Quinoa Walnut and Cashew Cheese Meat Balls

This is one of my favourite go to dinners lately. The quinoa 'meat' balls are filling and incredibly yummy and best of all, they're healthy. You can serve them with a side of salad or even with pasta. I prefer them with raw zucchini ribbons. This gives it a nice crunch and a serving of raw into your diet.



Preparation Time: 10 minutes & 2hrs soaking minimum
Cooking Time: 25-30 minutes
Makes: 4 servings

Ingredients

Cashew Cheese
130g raw cashew nuts, soaked 2-7hrs
1tbsp lemon juice
1tsp sea salt
1tbsp olive oil
1/2tsp dried onion powder
1tsp rosemary, fresh or dried
Pepper, to taste

Meat Balls
90g quinoa, rinsed thoroughly
1 batch of cashew cream cheese (recipe above)
20g parsley, roughly chopped
20g basil, roughly chopped
125g walnuts, finely chopped
1tbsp flour (wheat or gluten-free)
2tsp sea salt
2tsp oil, for baking
Pepper, to taste

Herb Sauce
20g parsley, roughly chopped
20g basil, roughly chopped
40g sunflower seeds
60ml olive oil
1 clove garlic, crushed
1 lemon, juice
salt, to taste



Method

  • Preheat oven to 200C.

  • Once cashews have soaked for a minimum of 2 hours, preferably overnight, place all cashew cheese ingredients into food processor and blend for 2-3minutes until smooth. Set aside



  • In a saucepan, add quinoa to boiling water. Simmer on medium heat for 5 -10 minutes, rinse in sieve and drain out excess water.



  • Add all 'meat' ball ingredients to food processor and combine well.



  • Roll into approx. 2tbsp measure balls and place on lined baking tray. Drizzle with oil or use spray oil and bake for 25-30minutes, turning twice to cook evenly.



  • While the balls are cooking, prepare the herb sauce and pasta (if having with pasta). Add all herb sauce ingredients to a blender or food processor and blend for a few minutes until well combined and emulsified.



  • Serve balls covered with herb sauce with a side of zucchini ribbons or over pasta. If you are avoiding pasta to stay healthy, try Slim Pasta . It is also gluten free.
