Quorn Mince Vegetarian Pasta Bake

This recipe makes a great vegetarian meal and a healthy alternative for everyone wishing to make a change.Quorn branded mince is used for this particular recipe, the mycoprotein makes a healthy substitute for meat.

Frozen Quorn Mince


Preparation Time: 20 minutes
Cooking Time: 65 minutes
Makes: 5 servings

Ingredients
200g Quorn mince
4 large potatoes
250g pasta
400g canned tomatoes
4 fresh tomatoes
1 courgette
2 onions
3 garlic cloves
1 small chilli
Cumin seeds (optional)
Milk
Butter
4 tbsp cooking oil
Sprig of parsley
Salt and black pepper


Method

  • Peel and dice the onion. Warm up 4 tbsp of cooking oil in a pan and add the onion.

  • Add 1 tbsp salt and some black pepper seasoning, stir occasionally.

  • Grate the garlic and add it to the pan. Optional: add a pinch of cumin seeds.

  • Cook for 4-6 minutes on a medium heat. Then add the tinned tomatoes. Stir occasionally.

  • Slice the fresh tomatoes and chilli then add it to the same pan.

  • Cook on a low heat for 10 minutes stirring occasionally (if you have the luxury of time cook for 20 minutes for a more intense flavour).

  • Whilst the sauce is cooking, peel a courgette and cut it in half. Then using the same peeler thinly slice the courgette into wide sections. Leave these to a side they will be used later.

  • Grate any small pieces of courgette left over and cook them with the tomato sauce.

  • Add the Quorn mince to the sauce and cook for 10 minutes.

  • Boil the potatoes until they are ready to be mashed. Once they have cooked allow them to cool then peel them.

  • Mash the potatoes and add some milk, butter and parsley. The amount you add can be adjusted to your preference. Tip: creamy mash will be easier to spread over the bake.

  • Cook the pasta for half the time instructed on the pack. Or cook until the pasta starts to soften. Add some oil to the pasta once it has been strained to add flavour.

  • In an oven proof dish add half the Quorn sauce. Then add a layer of the sliced courgettes. Add the pasta then the remaining Quorn sauce. Top off with the mashed potato.

  • Adding grated cheese on top of the mash is an optional addition.

  • Cook in the oven for 45 minutes at roughly 200 degrees (this varies depending on appliance).
