Quorn Mixed Bean Curry

This delicious dish is very simple to make and very cheap to make too! The vegetables can be mixed and match and change the odd thing here and there as it is a very easy dish to adapt. This dish can also be easily made in a slow cooker over 6 hours.

Preparation Time: 10 minutes
Cooking Time: 65 minutes
Makes: 6 large servings


1 Large Onion
1 ½ Cups Quorn pieces
1 Can mixed Beans
1 Large Carrot
1 Cup Peas
2 Medium Potatoes
2 Cans diced tomatoes
3 Tablespoons Curry Powder
1 Tablespoon Turmeric
1 Teaspoon Chilli Powder
1 Cup Water


Prior to cooking chop the onion and carrot into roughly small pieces.

Wash and peel the potatoes then dice into cubes approximately the same size of the Quorn pieces.

Heat small amount of water in large saucepan on a medium heat and add the onion and carrot, cook for 1 minute.

Add the Quorn and peas stirring for 1 more minute.
Add the remaining ingredients into the saucepan and allow to cook on a medium heat mixing occasionally for 45-60mins depending on how soft you like your vegetables.

Serve hot with plain naan bread, brown rice or basmati rice.
