Rainbow Quinoa Salad

Easy way to boost your immune system and get a fistful of nutrients in one go!

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
50g quinoa
25g bean sprouts/alfalfa/broccoli
Handful of chopped almonds
Handful of goji berries
1 small squash
Coconut oil
Black pepper

Method
  • Wash the quinoa and put into a pan on boiling water, turn to a simmer and cover for 10 minutes
  • Chop the squash into bitesize chunks and put into a pan of boiling water for 10 minutes (keep the heat high)
  • While they are cooking put your chopped/crushed/bashed almonds in a bowl along with the berries and broccoli sprouts. Add a tablespoon of melted coconut oil and half a tsp of ground black pepper and set aside
  • After 10 minutes check the quinoa, the grains should have popped out at this stage and it should be relatively dry but fluffy. Put the lid back on and leave for another 5 minutes
  • Using a colander drain the squash and transfer it to the bowl of berries, almonds and sprouts
  • Check the quinoa, it should be done. Transfer it to the bowl of nearly ready salad and toss everything together ensuring everything is nicely coated with the mild seasoning.



  • Your salad is done.
