Raspberry & Almond Teacakes

Simple and sweet teacakes for a perfect tea party at home. I especially like this recipe because the almond meal gives the teacakes a slightly different texture compared to the usual cake recipes while still retaining the soft and sweetness when you bite into it.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 6 servings

30g butter, softened
1/4 cup caster sugar
1 egg
1 tsp vanilla essence
1/2 cup self-raising flour
1/4 cup milk
1/4 cup almond meal
1/4 cup fresh or frozen raspberries
10g butter, melted
1/2 tbsp caster sugar to coat

Preheat the oven to 160C and prepare 6 cupcake cases.
Beat the butter, sugar, egg and vanilla for 3 minutes or until combined.

Sift in half the self raising flour.

Add in half the milk.
Repeat with the remaining flour and milk and combine with a spatula.

Add in the almond meal and combine well with a spatula.

Spoon the mixture into the prepared cases.

Top the mixture with raspberries.

Bake for 20 minutes or until a skewer inserted comes out clean.
Brush the teacakes with melted butter and sprinkle with caster sugar.

Allow to cool for a few minutes and serve.
