Raspberry Chia Pudding
For people who can't handle a big breakfast after waking, a chia pudding is a great compromise.
Filling without weighing you down, chia seeds are packed full of concentrated vitamins and minerals - giving you a head start for the day.
Here I've made a raspberry chia pudding, but any fruit of your choice could be substituted according to taste.
Preparation Time: 5 minutes (plus overnight soak)
Makes: 1 serving
Ingredients
1 cup raspberries, washed
1/4 cup chia seeds
1 cup almond milk
1/2 tsp ground cinnamon
1 tbsp mixed nuts/ seeds
Method
Place raspberries, chia seeds and almond milk in a cup or bowl, and mix well.
Cover and refridgerate for 5 hours or overnight.
Before eating, mix well again, and top with cinnamon and nuts/ seeds.
