A beautiful biscuit base is the start for this delicious slice. Filled with raspberry jam and topped with crunchy golden coconut. Perfect with a cup of tea. The ultimate in comfort cooking.
Preparation Time: 15 minute
Cooking Time: 50 minutes
Serves: 12 slices
Ingredients
2 cups of plain flour
1 cup of caster sugar
125g butter, cubed and cold from fridge
3 eggs
1 teaspoon vanilla extract
¾ cup of good quality raspberry jam
2 cups of desiccated coconut
Method
Preheat oven to 180 degrees (fan forced).
Grease and line a slice tray with baking paper.
In a food processor blend flour, ½ cup of sugar and butter, till it resembles bread crumbs.
Add egg and vanilla. Process till it forms a dough. Press dough into base of slice tray. Use the back of a spoon to create a level base.
Bake 25min until golden. Spread jam over warm base.
Whisk remaining eggs and ½ cup of sugar together.
Spread this mixture over jam.
Bake for 25 minutes. Leave in slice tray to cool completely before slicing.
