Raspberry Coulis

Berry coulis is a wonderful addition to any dessert, used as a topping for ice cream, cheesecake or scones, or simply spread on toast instead of jam. This recipe is for raspberries but feel free to adapt it using blueberries, strawberries, or any other berry you choose.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 8 servings

Ingredients
300g frozen raspberries
1/4 cup white sugar
1 1/2 tbsp water

Method
  • Place raspberries, sugar and water in a medium saucepan.



  • Heat berry mixture (while stirring) over high heat until boiling, then reduce to a simmer.



  • Once berry mixture is thick and pulpy (this should take 5 - 10 minutes), remove from heat and stand for 5 minutes.



  • Push berry mixture into a sieve to strain out any lumps or seeds.




  • Chill coulis until completely cold. This can now be added to your favourite desserts, stirred through cream for scones, spread on toast or simply used as a topping for ice cream.

  • Enjoy!
