Raspberry Jelly Slice
This beautiful looking jelly slice looks involved but it's actually easy enough that you can get your children involved in making it. It's perfect for school fetes, afternoon teas, morning teas and parties.

Serves: 12-16 slices
Ingredients
250 g milk arrowroot biscuits (or other plain biscuit)
150 g butter, melted
395 g condensed milk
1/2 cup lemon juice, strained
3/4 cup boiling water
2 tsp gelatine powder
85 g packet of raspberry jelly crystals
Method
Grease and line a 16 x 26cm slice pan.
Crush the biscuits finely in a food processor or similiar. Add the melted butter and mix to combine.
Press the biscuit mixture into the base of the pan.
Combine the condensed milk and lemon juice in a bowl.
In a separate bowl, combine the boiling water and gelatine powder. Stir until the gelatine has dissolved, then add it to the condensed milk mixture. Mix well.
Pour the mixture over the biscuit base and refrigerate until firm.
Prepare the jelly by following the packet instructions but using 100 ml less water than directed. Allow to cool to room temperature before pouring over the top of the condensed milk mixture.
Refrigerate until the jelly has set before removing from the pan and slicing.
