Raspberry Pecan Slice
This raspberry pecan slice is an old family favourite and an all-round crowd pleaser. Combining a crumbly buttery base, crunchy pecans and a slightly tart raspberry filling, this slice is rich, comforting and devastatingly moreish.
While raspberry preserve has been used in this recipe it can just as easily be swapped out for strawberry, blueberry or even apricot flavoured jams.

Makes: 18 servings
Ingredients
2 ¼ cups flour
¾ cup sugar
140g unsalted butter, softened and cubed
1 egg
1 cup pecans, roughly chopped
½ cup raspberry jam
Method
Heat oven to 170 degrees and line a 20cm by 20cm tray with baking paper.
In a large bowl combine the flour, butter, egg and pecans. Beat at a low speed until the mix just begins to form a ball.
Set aside 1 cup of the dough and evenly press remaining mix into the lined tin.
Spread jam out over the base of the slice evenly, ensuring to leave a .5cm boarder, then crumble reserved dough over the jam.
Bake for 40-45 minutes or until lightly golden. Allow to cool before cutting into bars or squares.
