Raspberry Shortcake Trifles

Summer time is never over when you have some Raspberry Shortcake Trifles. This sunshine filled dessert will definitely brighten and sweeten up your day.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 6-8 servings

1/3 cup cornflour
1/3 cup plain flour
1/3 cup self-raising flour
3 eggs
2/3 cup caster sugar

Raspberry jam
Frozen raspberries
300ml thickened cream
1/4 cup caster sugar

Preheat oven to 160C, grease and line a cake pan.

For the sponge, beat together eggs and sugar until thick and creamy.

Sift in cornflour, plain flour and self-raising flour and gently fold together using a metal spoon.
Divide the mixture into the cake pan and bake for 20 minutes or until the sponge springs back when lightly touched.

Meanwhile beat together cream and caster sugar until soft peaks.

When the cake is cooled, cut into smaller pieces or shapes to fit your trifle cups/containers.

Place a layer of sponge into each cup/container.

Spoon jam over the layer of sponge.

Spoon over the prepared cream.

Top with frozen raspberries.

Repeat until your cup/container is full and fill with a last layer of cream.

Top with raspberries and refrigerate for an hour or until chilled to serve.
