Raspberry Trifle

Frozen fruit is excellent for trifiles because it cools the liquid jelly down very quickly.

Preparation Time: 45 minutes
Cooking Time: N/A
Serves: 4

Ingredients
350g frozen raspberries
1 x packet of raspberry jelly
100g custard (or enough to cover the surface)
300ml double cream
1 tbsp flaked almonds
285ml boiling water
285ml cold water

Method
  • Make the jelly, let it set and break it up.
  • Using a rolling pin, break up the frozen raspberries in a bag, and then pour them into a clear bowl. The bowl should be deep enough so that the raspberries come about halfway to the top.

  • Pour the liquid jelly over the top and then place in the fridge until it has set.
  • Pour over the custard and spread it so that it covers the entire surface.
  • Whip the cream until it is thick and doesn’t drop from the whisk.
  • Spoon the cream over the custard and sprinkle over the flaked almonds.
