Raspberry Trifle

Trifle, raspberry, cream, custard, almonds, dessert, pudding, jelly

Frozen fruit is excellent for trifiles because it cools the liquid jelly down very quickly.

Preparation Time: 45 minutes
Cooking Time: N/A
Serves: 4

350g frozen raspberries
1 x packet of raspberry jelly
100g custard (or enough to cover the surface)
300ml double cream
1 tbsp flaked almonds
285ml boiling water
285ml cold water

Make the jelly, let it set and break it up.
Using a rolling pin, break up the frozen raspberries in a bag, and then pour them into a clear bowl. The bowl should be deep enough so that the raspberries come about halfway to the top.

Pour the liquid jelly over the top and then place in the fridge until it has set.
Pour over the custard and spread it so that it covers the entire surface.
Whip the cream until it is thick and doesn’t drop from the whisk.
Spoon the cream over the custard and sprinkle over the flaked almonds.
