Raspberry White Chocolate Cheesecake Brownies
I'm a big fan of chocolate brownies and love the simplicity of making them. These brownies take a little more effort but are worth it for the extra indulgence they offer.
A delicious chocolate treat
Preparation Time: 15 minutes
Cooking Time: 50 minutes
Makes: 16 servings
Ingredients
Brownie mixture
100g dark chocolate, broken into pieces
100g soft butter
2 large eggs, beaten
100g light muscovado sugar
100g plain flour
100g white chocolate, broken into small pieces
125g raspberries
For the cheesecake mixture
1 large egg yolk
200g cream cheese
50g granulated sugar
1tbsp plain flour
Method
Pre heat oven to 180 or 160 for fan ovens. Grease an 18in cake tin and line base with baking paper.
Melt the dark chocolate in a bowl over gently simmering water, stir occasionally until all the chcolate is melted and then remove from the heat and allow to cool slightly.
Cream the butter and muscovado sugar until a thick paste is formed.
Add the egg slowly and keep stirring.
*Add the flour and melted chocolate and stir to form a glossy mixture.
Fold in the broken pieces of white chocolate and the raspberries.
In a separate bowl whisk the ingredients for the cheesecake.
Mix until smooth.
Tip half of the brownie mixture into the baking tin, spread it evenly.
Add half of the cheesecake mixture to the brownie base in blobs. Swirl together using a skewer.
Gently spread over the rest of the brownie mixture and swirl in the remaining cheesecake mixture as before.
Place in oven and bake for 50 minutes, until the top is springy.
Cut into even squares.
Yummy served warm or cold
