Raw Breakfast Parfait

My sweet tooth is really in overdrive these days but instead of reaching for a croissant or hot chocolate at breakfast I've been reaching for fruit. Making 'nicecream' is one of my favourite snacks and this raw breakfast parfait combines the sweetness of 'nicecream' with the goodness of chia seeds and nut butter.

Enjoy dessert for breakfast with this gorgeous and healthy parfait.


These can be made a day or two ahead and be kept very cold but they are a cinch to make so I make this fresh before devouring.

Preparation Time: 15 minutes
Cooking Time: 0 minutes
Makes: 1 servings

Ingredients
Layer one
2 tbsp. chia seeds
3/4 cup water (or milk)
1 kiwi fruit

1.5 bananas - frozen
Handful of berries

Layer three
Few berries
1 tbsp. peanut butter walnut butter



Optional toppings
Berries
Coconut flakes
Chocolate flakes
Cinnamon
Yogurt

Method
Layer one
  • In a tall glass combine the chia seeds with the water (or milk) and leave until the chia seeds have puffed up and formed a gel.



  • Peel and slice a kiwifruit (or any fruit) and push down the sides.

  • Layer two
  • Blend the berries and bananas until a smooth, thick paste has formed. Pour over the chia seed layer.



  • Topping
  • Top your raw breakfast parfait with fruits and nut butter, stick a long spoon in and enjoy!
