This is another of my recipes that has no processed sugar in it, although many of the ingredients DO have natural sugars.
These are delicious, and keep in the fridge for at least 2 to 3 weeks.
They are quite rich, so you cannot eat a lot of them, which is a good thing!
Preparation Time: 20 minutes plus fridge time
Cooking Time: 0 minutes
Serves: About 25 bars
Ingredients 1 tbsp chia seeds
1 cup walnuts
125 g dried apple
½ cup sultanas
½ cup shredded coconut, plus a bit
½ cup rolled oats
¼ cup cacao powder
1/3 cup pumpkin seeds
125 g Medjool dates, pitted
¼ cup coconut oil, melted
2 tbsp maple syrup
Put the chia seeds into a small bowl with 2 tbsp water, and leave for about 10 minutes, or until thickened.
Line a 18 x 28 cm slice pan, or similar with baking paper.
Process the walnuts, dried apples, sultanas, oats, coconut and cacao in a processor until they are finely chopped.
Add the pumpkin seeds and pulse again to combine.
Transfer this mixture to a large bowl and keep aside.
Meanwhile, put the dates in the processor with the soaked chia, coconut oil and the maple syrup.
Process until it forms a paste.
Put half of the walnut mixture into the processor and process to combine.
Transfer this to the bowl with the remaining mixture, and stir it till it forms like a thick dough.
Press the mixture evenly into the prepared pan, and top with the extra coconut.
Chill for about 2 hours so that it sets and is firm.
