Raw Chocolate Lava Cake

It's hard to believe this raw vegan chocolately treat is almost good for you, but being sugar free and filled with cacao, dates and walnuts, it almost is!

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Makes: 6 servings

Cake mixture
1/3 cup oats
1/3 cup walnuts
1/3 cup dates
1/3 cup raisins
Nut milk as needed to bind

Chocolate Lava filling
1/3 cup melted coconut oil (or cacao butter)
1/3 cup maple syrup
1/3 cup dates
1/4 tspn cinnamon
1/4 tspn salt
1/4 tspn chilli powder (optional)

Put all the cake mixture ingredients except nut milk into a food processor and blend together.

We used cacao powder, but you could substitute with cocoa powder in a pinch.

Here are the dry ingredients pre-blend.

And post-blend. As you can see, you don't want to crush them down to nothing, just enough that they will blend.

Now add a small amount of nut milk if needed to help bind the cake. This may not be needed, depending on the moistness of your dates.

Line 6 cupcake holes, or 12 mini cupcake holes for smaller cakes with 2/3 of the ingredients. You want to follow the shape of a cupcake, leaving a well in the middle to put lava mixture into.

Put in the fridge for a few minutes to set while making the chocolate lava.


Put maple syrup and coconut oil (or cacao butter if you are using it) into food processor.


Now add dates, cinnamon, salt and chilli powder if using and blend until it reaches a rich, chocolately consistency.


Pull the patty pan out of the fridge and fill with chocolate lava.


Now put reserved cake mixture on top to complete.


Lift a patty pan out and turn onto a plate to serve. If some crumbs fall out, they will make a nice decoration.
