Raw Chocolate Raspberry Slice

This raw chocolate raspberry slice is so very delicious and a pinch to make. It may seem complicated but is really just blending and freezing. This recipe is raw, vegan, gluten free, refined sugar free and much healthier than any raspberry slice found in the supermarket.

Enjoy with a hot coffee or pot of tea with friends.

Preparation Time: 10 minutes
Cooking Time: 3 hours
Serves: 16 - 20

12 medjool dates
1 cup raw nuts (macadamias or/and cashews work best)
1/3 cup raw cacao powder
3 tablespoons coconut oil

Raspberry Layer
2 cups fresh raspberries
2/3 cup raw cashews or macadamias
4 tablespoons shredded coconut
6 tablespoons pure maple syrup
1 tablespoon coconut oil

Chocolate Layer
1/3 cup coconut oil
2 tablespoons pure maple syrup
1/3 cup raw cacao powder

To make the base
Blend all the base ingredients in a food processor until it resembles fine crumbs and sticks together when pressed.
Spoon the mixture into a lined slice tin and press down.
Place in the freezer.

To make the raspberry layer
Blend raspberry layer ingredients, except the coconut oil, in a blender.
Add in the coconut oil and blend again until combined.
Remove the tin from the freezer and pour the raspberry layer over the base.
Smooth over with the back of a spoon and place into the freezer for an hour to set.

To make the chocolate layer
Melt the coconut oil in a pot over a low heat.
Pour into a bowl with the maple syrup and whisk until combined.
Add in the cacao powder and stir.
Pour the chocolate on top of the raspberry layer and place back into the freezer for another two hours.

Once completely set remove from the tin, slice straight away with a hot knife.
Enjoy and store in the freezer or fridge.

The raspberries can be subbed for cherries, blackberries, blueberries or even strawberries.
You can cheat and buy some dark chocolate to melt over the top.
