Raw Nut Butter

Nut butters are actually a high protein, tasty and versatile, good-fat rich snack, but the added sugar and salts (amongst other preservatives) found in commercial products, counter these beneficial nutrients.



Here is a simple recipe for making your own nut butters - you can use any nut, or even use a mix if you want to be really creative!

Preparation Time: 20 minutes
Makes: 1.5 cups

Ingredients
2 cups of any nut, or a mix (you may wish to use activated nuts for the most pure result. See my recipe for activated nuts if desired.)
1 tablespoon oil (I use coconut oil for added omega-3 fatty acids and the subtle sweetness)

Method
  • In a food processor, blitz the nuts on high until a fine crumble is formed (about 2-3 minutes).

  • Add the oil to the mix, then continue to process, stopping to ensure a consistent mixture is being formed.

  • The butter can take anywhere between 10-20 minutes to be completely formed, depending on the nut used, so monitor accordingly. Add additional oil or even warm water for denser nuts if the mixture is too thick.

  • Once complete, set aside to cool before use. Then enjoy with fruit/ veggie sticks, on toast or in sandwiches, or even added to smoothies or cereal.
