Raw Nut Falafel

The raw food phenomenon has exploded in the health world over recent years. For those unsure about how to where to start, this recipe is a simple way to begin.

These are great served with a side of fresh salad, or added to a wholemeal wrap with avocado.

Preparation Time: 10 minutes
Makes: 15 individual falafels

1/2 cup pumpkin seeds
1/2 cup sunflower seeds
30g walnuts
30g cashews
1 tbsp sesame seeds
5 tbsp coriander, chopped
2 garlic cloves, crushed
3 tbsp olive oil (or coconut oil)
juice of half a lemon
1 tsp dried oregano


In a food processor or blender, grind the seeds and nuts on high, into a fine flour, making sure it doesn't turn into a butter consistency.

In a separate bowl, mix through the seed/nut flour with all remaining ingredients. Squeeze some mixture in one hand - if it doesn't crumble and fall apart it has enough moisture. If not, add some water and mix through again.

Roll into falafel sized balls and either serve immediately or keep in the fridge until desired. If you aren't a huge fan of the 'raw' variety, feel free to pan fry over a low heat to brown and warm through. Delicious either way!

Of course, feel free to substitute with any green herb you prefer, I'm sure they will turn out just as good!
