Raw Oreo Type Biscuits
I first had these raw vegan biscuits at an organic shop that I go to, and they kindly gave me the recipe.
However I had to make them twice as the first time I think they may have given me the wrong quantities for the chocolate biscuit base!
It turned out beautiful the second time, and although I am not vegan, I like some of the raw foods.
This one is extremely rich, despite not being so sweet and having no added sugar, and one biscuit was quite enough.
Preparation Time: 30 minutes (plus soaking cashews)
Cooking Time: 0 minutes
Makes: 9 - 10 biscuits
Ingredients
For the biscuit
90 g pecans
150 g pitted dates (Medjool are the best)
1 tsp pure vanilla powder or pure paste
3 tbsp cacao powder
For the filling
1 tbsp coconut oil
1 tbsp maple syrup
1 tsp vanilla powder or paste
1 cup cashews
Method
I always buy broken cashews as these are cheaper and better for cooking.
Soak the natural cashews in water for at least two hours.
Put the biscuit ingredients in a food processor.
Process until it becomes like a paste or dough like consistency.
Roll the mixture into a ball with your hands.
Flatten this on a board with a rolling pin.
Cut the biscuit bases with a circular biscuit cutter, and put in the fridge till they are hard.
Drain the cashews and, in a food processor, add these plus the other filling ingredients.
Blitz till the mixture is creamy.
Spread the filling on one of the biscuit bases.
Sandwich two biscuits together with the filling in the middle.
Serve.
If you have any leftovers, keep them in the fridge.
They are delicious and quite rich -far nicer than the over sweet, shop bought Oreo!
