Raw Papaya Candy
We have lots of papaya trees in our garden. We usually eat the fruit or make some dry stir fry curry with the raw papaya.
We can make chewy papaya candy from the raw ones. I had always thought it to be a long process however recently, I did a lot of research and was surprised to know that it is very easy to make papaya candy.
We can also make and preserve the candy. We usually add it in cakes and puddings. The candied papaya is called tutti-frutti in my native language. We usually get it in different colours from the shop. Here I am using beetroot to colour the papaya candy.
Preparation Time: 25 minutes
Cooking Time: 30-40 minutes
Soaking time: 12-24 hours
Makes: 2 cups
Ingredients
200-gram raw papaya
1.5 cup sugar
1 tsp grated beetroot
7-8 cups of water
Method
Peel the papaya skin. Cut into two pieces and deseed. Then slice it lengthwise and chop it into small cubes.
Bring 4 cups of water to boil. When it starts to boil, add the chopped raw papaya into it and cook for 3-4 minutes on medium-low heat.
Remove from heat and let the cooked papaya remain in hot water for 5 more minutes.
Now mix sugar and remaining water in a bowl.Cook until the sugar is completely dissolved.
Then drain the papaya from water and add to the sugar syrup. Cook on medium-low flame until the sugar syrup is thick but before reaching the thread consistency.
Now add the grated beetroot into the syrup and mix well. Remove from heat.
Cover and keep aside to soak for 12-24 hours. After 24 hours, strain the candied papaya and spread over a wire mesh placed on top of a plate. Let it dry and absorb all the sticky sugar syrup.
Store in an air-tight container. If you over cook the sugar syrup it will crystalize. You can use lemon juice to avoid crystallization.
Add the homemade papaya candy in desserts, yogurt, ice cream or cake. Enjoy.
