Raw Peanut Butter Cups

Don't let the word 'raw' put you off, these organic yet tasty treats are just the chocolate fix we all need. They are kinda healthy too – well healthier than the alternative.

Peanut butter cups

Cooking Time: 20 minutes
Makes: 18

This recipe is made in two parts, the peanut butter filling and the chocolate top. Always start with the peanut butter first so it has time to set while you prepare the chocolate.

Peanut filling:
1 cup organic peanut butter (if the peanut butter has sugar already added to it you may have to adjust the amount of sweetener you add)
1 tbsp honey or a sweetener of your choice (e.g. rice malt syrup)
3 tbsp of organic coconut oil, melted


Mix all the ingredient together, it should be quite runny.
Half fill mini patty pans with the mixture.
Place them into the freezer.

Chocolate topping:

1/2 cup cacao powder
1 tbsp rice malt syrup
1/3 cup cacao butter.
I know this stuff is expensive but if you can get your hands on it, it is amazing! Otherwise I’ve heard coconut oil works too, you might just have to add slightly more cacao powder.
1 tsp vanilla essence
pinch of salt


Melt the cacao butter in a heatproof bowl over a saucepan of boiling water.
Once melted mix in all the other ingredients. I like the chocolate topping a little bitter as I feel the peanut butter filling can be quite sweet but you can add more sweetener to the chocolate topping if you feel the need.
Now that the chocolate topping is all mixed together, spoon it evenly on top of the previously frozen peanut butter molds.
Return to the freezer for about 10 minutes, after that they will be perfectly delicious to eat.
