Raw Vegan Coconut Balls

I am not Vegan however saw a similar recipe while waiting at the hairdresser, and as they looked really good, I decided to try them - I think they used some sort of protein powder in the original however I used only what I had in the pantry!

I also liked the fact that there is little added sugar in this recipe, so it makes a wonderful small snack.

Mine turned out very lemony, however you can adjust the lemon and the maple syrup if you want it a bit sweeter.

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Makes: 15 balls

Ingredients
¾ cup cashews - I mixed macadamia with cashew as did not have enough cashews
¾ cup shredded coconut
2 - 3 tbsp lemon juice
2 tbsp coconut oil
1 tbsp maple syrup
Extra shredded coconut, to roll

Method
  • Process the cashews until they are a coarse mixture.

  • Add the shredded coconut, lemon juice, coconut oil, and maple syrup.


  • Blend or process again until it is evenly mixed and is a sticky dough consistency.
  • I used a stick blender for this


  • Scoop some out with a teaspoon and roll in your hands to a bite size ball.

  • Roll each one in the extra shredded coconut till coated all over.


  • Put in the fridge, or if in a hurry, put them in the freezer for about 30 minutes to harden.

  • Serve.
