Red Beans Chilli
An easy one pot hearty vegetarian winter warmer with a secret, stocky ingredient.

Cooking Time: 40 x minutes
Makes: 4 servings
Ingredients
1 x onion
1 x large carrot
1tbsp olive oil
1 x tin kidney beans
1 x tin tomato
1 tbps tomato puree
1 heaped tsp paprika
1 tsp cayenne pepper
2-3 tsps Marmite
2 x cups rice
To serve (optional)
Fresh slice of lime
Fresh coriander
Chopped spring onions
Sour cream
Cheese
Method
Dice the carrots or chop into discs if you prefer
Dice the onions
Place the olive oil into the sauce pan and warm
Place the carrots and onions into the pan and cook
Add paprika and cayenne pepper to taste
Cook the carrot and onion together in the spices for a few minutes until beginning to soften
Strain and rinse the kidney beans and add to the saucepan
Add the tin of tomatoes and the tomato puree
Stir the mixture. At this stage there should be enough liquid to completely cover all of the vegetables. If not, add up to a cup full of water to the mix
Bring to the boil then cover and simmer on a very low heat for 20mins, stirring occasionally
Add 2-3 tsps of Marmite to the chilli mix and stir
Place the rice in a saucepan then add 4 x cups of boiling water. Bring rice to the boil then reduce the heat to a very low simmer for around 17 mins or until the rice has absorbed all of the water
Serve the chilli on top of the rice
Garnish with fresh lime, chopped spring onions and serve with cheese and sour cream (optional)
Top tip - make the chilli one day in advance and leave overnight for the flavour to fully mature.
