Red Cabbage and Apple Casserole
This is a great, easy and healthy accompaniment to any meal. It has a tangy fruit flavour which makes it ideal to serve with meats including duck, roast pork and even turkey.
Preparation Time: 10 minutes
Cooking Time: 2½ hours
Serves: 3 - 4
Ingredients
350 g red cabbage
1 Granny Smith apple (or green apple)
½ Spanish onion
8 g butter
25 g raisins
Salt and pepper
1 tbsp sugar
2 tbsp white wine or wine vinegar
1 tbsp port - optional
Method
Shred the red cabbage finely, taking out the thick central stalk.
Peel and core the apple and slice it thinly.
Peel the onion and slice thinly.
Brush the inside of an ovenproof dish with the butter. Put a layer of the shredded cabbage in the bottom and cover with a layer of apple slices.
Add a layer of onion.
Sprinkle a few raisins and season with salt and pepper to taste.
Mix the sugar and wine and the port if using. Sprinkle a bit of this mixture over the ingredients in the dish.
Continue layering the ingredients until they are all used up. This includes the rest of the raisins and liquid.
Cover the casserole and bake in a slow oven of 150°/130° if fan forced, for 2 to 3 hours.
Taste and adjust the seasoning and serve.
