Red Cabbage and Apple Casserole

This is a great, easy and healthy accompaniment to any meal. It has a tangy fruit flavour which makes it ideal to serve with meats including duck, roast pork and even turkey.

Preparation Time: 10 minutes
Cooking Time: 2½ hours
Serves: 3 - 4

Ingredients
350 g red cabbage
1 Granny Smith apple (or green apple)
½ Spanish onion
8 g butter
25 g raisins
Salt and pepper
1 tbsp sugar
2 tbsp white wine or wine vinegar
1 tbsp port - optional

Method
  • Shred the red cabbage finely, taking out the thick central stalk.

  • Peel and core the apple and slice it thinly.

  • Peel the onion and slice thinly.

  • Brush the inside of an ovenproof dish with the butter. Put a layer of the shredded cabbage in the bottom and cover with a layer of apple slices.


  • Add a layer of onion.

  • Sprinkle a few raisins and season with salt and pepper to taste.

  • Mix the sugar and wine and the port if using. Sprinkle a bit of this mixture over the ingredients in the dish.


  • Continue layering the ingredients until they are all used up. This includes the rest of the raisins and liquid.

  • Cover the casserole and bake in a slow oven of 150°/130° if fan forced, for 2 to 3 hours.

  • Taste and adjust the seasoning and serve.
