Red Kidney Beans Rice

Red kidney beans with rice makes a perfect combination and is a healthy and a filling one pot dish.

Soaking time: 6-8 hours (Overnight for better results)
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 6-7 servings

1 cup red beans
2 cups long grained rice
Finely chopped onion
Finely chopped tomato (you may use canned tomato puree as an alternative to this)
Finely chopped coriander leaves
1 tsp Ginger Garlic paste
1 tsp oil
1 tsp red chilli powder
2 tsp coriander powder
1/4 tsp turmeric powder
1 tsp cumin seeds
1pinch asafetida
2 tsp garam masala

Wash the red kidney beans and soak them in water for a minimum of 6-8 hours.

Add some oil in a pressure cooker and heat it.
Add cumin seeds to it. Once the cumin seeds start to splutter, add asafetida and chopped onions to it and stir it till it turns golden brown in color.

Now add chopped tomatoes, ginger garlic paste, turmeric powder, red chilli powder, coriander powder and garam masala. Mix the ingredients well and let it cook for 5 minutes.

Wash and drain the rice and add both red kidney beans and rice to the above mixture and stir it.

Now add 5 glasses of water and salt as per your taste and close the lid of the cooker. Let it to cook it on a medium flame.

Once you get at least 3-4 whistles of the pressure cooker, turn off the heat.
Open the lid of the cooker and garnish the dish with coriander. The dish is ready to be served and enjoyed.
