Red Pepper and Poached Eggs

Eggs are the wonder food, full of protein, containing all the essential amino acids to build strength so it’s no surprise they’re a popular breakfast food. When it comes to lunch, however, they’re forgotten. Here’s a quick recipe that will keep you full and satisfied from lunch time until home time.



Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
3 eggs
1 garlic clove
1/2 tsp black pepper
2 cherry tomatoes
1 red pepper
Grating of parmesan cheese

Required ingredients


Method
  • Chop the pepper and finely slice the garlic and set aside.



  • Add all of the vegetables to a oiled baking tray and place in the oven at 160 degrees/gas mark 3 for 20 minutes.



  • Crack the eggs into a saucepan of boiling water until poached to a consistency of your desire. Three minutes works for me.

  • The vegetables should be gently roasted, soft and easy to cut.



  • Scoop the eggs out of the saucepan and place into the 'boats' of the pepper.

  • Grate the parmesan on top and dig in.



  • It looks messy, but it's delicious.
