Red Pepper and Poached Eggs
Eggs are the wonder food, full of protein, containing all the essential amino acids to build strength so it’s no surprise they’re a popular breakfast food. When it comes to lunch, however, they’re forgotten. Here’s a quick recipe that will keep you full and satisfied from lunch time until home time.
Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2 servings
Ingredients
3 eggs
1 garlic clove
1/2 tsp black pepper
2 cherry tomatoes
1 red pepper
Grating of parmesan cheese
Required ingredients
Method
Chop the pepper and finely slice the garlic and set aside.
Add all of the vegetables to a oiled baking tray and place in the oven at 160 degrees/gas mark 3 for 20 minutes.
Crack the eggs into a saucepan of boiling water until poached to a consistency of your desire. Three minutes works for me.
The vegetables should be gently roasted, soft and easy to cut.
Scoop the eggs out of the saucepan and place into the 'boats' of the pepper.
Grate the parmesan on top and dig in.
It looks messy, but it's delicious.
