Red Salmon and Avocado Cakes with Cranberry Feta Pinwheels
I made these salmon patties very differently this time! I added mashed sweet potato and avocado with them instead of the usual mashed potato.
If you do not want to go to the expense of using red salmon in a tin, pink salmon will also work.
Preparation Time: 30 minutes plus fridge time
Cooking Time: 30 minutes
Makes: 4 servings
Ingredients
For the salmon
300 g cooked sweet potato, drained well
1 small avocado
2 tbsp flour
415 can red salmon, drained well
Salt
For the Pinwheels
75 g dried cranberries
110 g cream cheese
¾ cup feta cheese, crumbled
Up to ¼ cup spring onions, chopped
2 flour tortillas
Method
For the pinwheels
These can be made first as there is no cooking, and they are better if put in the fridge for an hour or so.
Combine all the ingredients except the tortillas.
Spread evenly along each tortilla.
Roll the tortilla as tight as possible.
Wrap in Glad Wrap tightly, and put in the fridge for at least an hour.
When ready to serve, simply cut them into bite sized pieces or whatever size you wish.
If you eat ham, you could put a slice of ham on before putting the mixture on the tortillas.
For the salmon
Mash the sweet potato, and drain any liquid out.
Add the avocado and flour and mash this in with the sweet potato.
Add the drained salmon and some salt.
I usually form the patties/cakes and put them in the fridge for a while, however, if in a hurry this does not need to be done.
Form into cakes, and if the mixture is too watery, add some bread crumbs or similar till the mixture holds together.
Shallow fry in a bit of hot oil for about 4 minutes on each side or until browned.
Serve with the pinwheels -this would be great party food if you make the salmon cakes quite small, and would also be good for school lunches.
