Red Velvet Chocolate Chip Cookies with Milk and White Chocolate Chips

Scrumptious cookies that are perfect with a cup of tea on a winter's day!

Preparation Time: 1 hour 10 minutes
Cooking Time: 10-15 minutes
Serves: 10

Ingredients
1 1/2 cups plain flour
1/4 cup cocoa powder
1/4 teaspoon salt
1/2 cup unsalted butter
3/4 cup brown sugar
1/4 cup white sugar
1 large egg
1 tablespoon milk
2 teaspoons vanilla extract
1 tablespoon red food colouring
3/4 cup white chocolate chips
3/4 cup milk or dark chocolate chips

Method
  • Whisk together the flour, cocoa, and salt.

  • In a separate bowl, use an electric mixer to combine the butter and sugars.

  • Add the egg, milk, and vanilla extract. Mix to combine.



  • Mix in the red food colouring.



  • Add the dry ingredients to the red mixture, and combine.



  • Fold in the chocolate chips. Keep a tablespoon of each type of chocolate chip aside to add on top of the cookies before baking.



  • Wrap the dough in plastic wrap or silver foil. Chill for 1 hour.

  • Preheat the oven to 170 degrees C.

  • Line or prepare 1-2 baking trays.

  • Roll the dough into small balls. It helps if your hands are covered in flour!

  • Pop a couple of extra choc chips on top of each dough ball.

  • Bake for 10-12 minutes.



  • Allow the cookies to cool for about five minutes, then set them on a wire rack, or start snacking right away while they're still warm!
