Red Velvet Chocolate Chip Cookies with Milk and White Chocolate Chips
Scrumptious cookies that are perfect with a cup of tea on a winter's day!
Preparation Time: 1 hour 10 minutes
Cooking Time: 10-15 minutes
Serves: 10
Ingredients
1 1/2 cups plain flour
1/4 cup cocoa powder
1/4 teaspoon salt
1/2 cup unsalted butter
3/4 cup brown sugar
1/4 cup white sugar
1 large egg
1 tablespoon milk
2 teaspoons vanilla extract
1 tablespoon red food colouring
3/4 cup white chocolate chips
3/4 cup milk or dark chocolate chips
Method
Whisk together the flour, cocoa, and salt.
In a separate bowl, use an electric mixer to combine the butter and sugars.
Add the egg, milk, and vanilla extract. Mix to combine.
Mix in the red food colouring.
Add the dry ingredients to the red mixture, and combine.
Fold in the chocolate chips. Keep a tablespoon of each type of chocolate chip aside to add on top of the cookies before baking.
Wrap the dough in plastic wrap or silver foil. Chill for 1 hour.
Preheat the oven to 170 degrees C.
Line or prepare 1-2 baking trays.
Roll the dough into small balls. It helps if your hands are covered in flour!
Pop a couple of extra choc chips on top of each dough ball.
Bake for 10-12 minutes.
Allow the cookies to cool for about five minutes, then set them on a wire rack, or start snacking right away while they're still warm!
