
Indulgent red velvet mug cake tastes delicious
This indulgent, moist, cafe style cake is delicious and can be made at home in less than 5 minutes. It is a great dessert or snack served warm or cold, with or without cream cheese icing. I like cooking mine slightly gooey like a mud cake. You can also make it lactose and gluten free so no one misses out. Enjoy!

Ingredients
1 egg, beaten
3 tbsp oil
3 tbsp milk (lactose free if required)
1/2 tbsp red food colouring
1 tbsp vanilla essence
4 tbsp cocoa or cacao
4 tbsp sugar (maple syrup or stevia will work)
4 tbsp flour (or white or brown rice flour for gluten free option)
1 tsp baking powder
1/8 tsp cinnamon
1/8 tsp salt
Method
Put the egg, oil, milk, food colouring and vanilla essence in a large mug and stir to combine.

The mixed wet ingredients look bright red
Mix the cocoa, sugar, flour, baking powder, cinnamon and salt in a bowl and stir to combine.

Stiring the combined dry ingredients
Add the combined dry ingredients to the wet ingredients and stir to combine, breaking up any lumps.

The batter should look smooth and glossy
Pour half of the batter into a second mug and place both mugs in the microwave for 1 - 1 1/2 minutes, until cooked. Check at 1 minute to see if cooked by inserting a skewer or knife and heat for 10 second bursts until cooked, if necessary. The total time will depend on your microwave setting and type of mug used. Mine took 1 minute and 10 seconds in the microwave.
Serve the mug with a spoon or turn out on a plate.

Use a knife to loosen the sides, place a plate on top, then turn over and tap the sides for the cake to come out
