Refried Beans with Lime
Refried beans or "frijoles" are the mashed potato of Mexican cooking. They are great as a side or as a main, are versatile, delicious and utterly addictive. This was the first time I made this popular dish and it is sure to become a staple.
I love the zesty lime added to these beans as well as the smokey paprika, once you have got the base down play with spices and textures to make these refried beans your own.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 2 mains or 4 - 6 sides
Ingredients
3 tablespoons of water or oil
1 Spanish onion
3 fat cloves garlic
400 grams kidney beans
1 tablespoon tamari paste
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cinnamon
1 lime
Method
Heat the water or (oil) and cook the diced onion and garlic until soft and fragrant.
Add the kidney beans and their liquid and stir in the tamiri paste and spices and cook for a few minutes.
Once most of the liquid is absorbed remove the pan off the heat and when it has cooled a little add them lemon juice and blend until the mixture is a lumpy puree. Taste and add seasoning as needed.
Sprinkle over the finely grated lime zest and serve as a dip with pita bread or corn chips or as a main component in a Mexican themed meal.
