Restaurant Style Beetroot Crumble

I enjoyed a rhubarb and berry crumble at my favourite vegan cafe and have recreate the dish with beetroot instead.



Preparation Time: 20 minutes
Cooking Time: 45 minutes
Makes: 10 servings

Ingredients
2 beetroot bulbs
6 apples
150g of butter
200g of flour
50g of honey
200g of granulated sugar
100g of brown sugar
Pinch of nutmeg



Method
  • Chop the stalks off the beetroot.



  • Scrub and peel the beetroot and chop finely.



  • Place the butter, flour and sugar in a food processor and blend until it resembles bread crumbs.



  • Press the mixture onto a baking tray and place in the oven for 15 minutes.



  • Peel and dice the apples.



  • Place the apples in a bowl and cover in honey. Add the beetroot and give it a stir.



  • Pour the apple and beetroot into an oven proof dish and scatter the brown sugar on top.

  • Cover the dish with the baked crumble and place in the oven for 30 minutes at 150 degrees/gas mark 3.



  • Once baked, dig in.
