Restaurant Style Beetroot Crumble
I enjoyed a rhubarb and berry crumble at my favourite vegan cafe and have recreate the dish with beetroot instead.
Preparation Time: 20 minutes
Cooking Time: 45 minutes
Makes: 10 servings
Ingredients
2 beetroot bulbs
6 apples
150g of butter
200g of flour
50g of honey
200g of granulated sugar
100g of brown sugar
Pinch of nutmeg
Method
Chop the stalks off the beetroot.
Scrub and peel the beetroot and chop finely.
Place the butter, flour and sugar in a food processor and blend until it resembles bread crumbs.
Press the mixture onto a baking tray and place in the oven for 15 minutes.
Peel and dice the apples.
Place the apples in a bowl and cover in honey. Add the beetroot and give it a stir.
Pour the apple and beetroot into an oven proof dish and scatter the brown sugar on top.
Cover the dish with the baked crumble and place in the oven for 30 minutes at 150 degrees/gas mark 3.
Once baked, dig in.
