Rhubarb and Orange Crumble
Sweet oranges compliment the tartness of rhubarb, to a refreshing crumble.
Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 5-6
Ingredients
150g plain white flour
50g butter
25g caster sugar
100g porridge oats
50g flaked almonds
400g rhubarb
2 oranges
½ lemon
Method
Chop the rhubarb, segment the orange, and mix together in an oven-proof bowl.
Squeeze the juice of half a lemon over the fruit.
Cook in the oven for 20 minutes.
Beat together the flour, butter, and sugar to make a dough with breadcrumb-like consistency.
Mix in almonds and oats, and then spread on top of the fruit and put back in the oven for another 20 minutes.
