Rhubarb Jam

Why not deviate from your most common jams and try using rhubarb instead? It's lovely and tart.


Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 1 1/2 jars

Ingredients
400g rhubarb
200g pectin/jam sugar
1 tbsp apple pectin
3 tbsp lemon juice

Method



  • Fill jam jars with hot water and place a plate in the fridge.



  • Chop the rhubarb.



  • Mix the rhubarb with the rest of the ingredients and bring to the boil in a saucepan.



  • Simmer until reduced, stirring occasionally.



  • Check to see if the jam is ready by putting a spoonful on the refrigerated plate. If it wrinkles, then it's ready.
  • Pour the water out of the jam jars and dry.



  • Use a funnel to pour the jam into the jars.



  • Date and Label.
