Rice Paper Wraps
I know this takes time. But it is totally worth the time you are going to spend. If you are going to use a store bought rice paper, this is just a matter of 10 minutes. My rice paper was homemade. Naturally it will take more time, but not too much more!

Makes: 12 servings
Ingredients
For rice paper
3/4 cup white rice
2/3 - 3/4 cup water
1 tbsp dried parsley
Salt to taste
For filling
1/2 cup carrot julienne
1/2 cup green beans julienne
1/4 cup onion julienne
1/4 cup green onion julienne
2 tsp olive oil
Salt to taste
Method
For filling - Heat oil in a pan. Add all the vegetables to the hot oil. Add salt and cook for 5 minutes on medium flame.
For making rice paper- Wash and soak the rice in water for 7- 8 hours.
Blend the rice, water and salt to form a very loose batter without any grains. Add more water if the batter is thick. Otherwise the rice paper will crack while steaming.
Add dried parsley and mix well.
Fill a wide mouth vessel with water and cover it with a cotton cloth and tie. ( Be careful not to burn the cloth)
Boil the water on high flame. When the steam starts to come, pour a ladle of batter onto the cloth.
Spread the batter in round shape with the back of the ladle. Cover and let it cook in steam for 1 minute.
Remove it without breaking. Use a wet steel or bamboo stick to remove the rice paper. Repeat with the remaining batter.
Place the rice paper on a plate. Place 1 tbsp filling in the center of the rice paper. Roll and wrap the rice paper tightly.
Cut the wrap into halves.
The rice paper wrap is ready. Serve with sauce
