Rice Vermicelli Tofu and Chicken Patties

Rice vermicelli has no much flavour itself and nutritious tofu has just soybean flavour. However, mixing them with tangy spices, flavoured sauces and chicken mince to make easy and very tasty patties, both the whole family and guests will enjoy having them.



Preparation Time: 10 minutes
Cooking Time: 10-15 minutes
Makes: 8-10 servings

Ingredients
300g chicken mince
100g stir-fry tofu, mashed
50g rice vermicelli
1-2 tbsp finely chopped coriander
1 small red onion, peeled, finely diced
1-2 red/yellow chilli, chopped, optional
1 tbsp premium oyster sauce
1 tsp premium soy sauce
1 tsp sugar
1 tsp chicken powder
1 tsp corn starch
1 tsp sesame oil
extra light olive oil
Japanese sesame dressing to serve



Method

  • Soak rice vermicelli in boiling water for 5 minutes until softened. Drain. Allow to cool. Cut into roughly 1 cm long.



  • In a mixing bowl, add chicken mince, chopped rice vermicelli, diced onion, chopped chilli (optional), chopped coriander, oyster sauce, soy sauce, sugar, chicken powder, corn starch, and sesame oil.

  • Stir thoroughly to combine.



  • Heat oil in a non-stick frypan over medium heat.

  • Spoon an egg-size ball mixture onto the pan.

  • Use a spatula to flatten the mixture.



  • Pan fry each side until golden brown and cooked through.

  • Repeat the steps with remaining mixture.



  • Serve immediately with sesame dressing.
