Rich Chocolate Cupcakes
This is originally a chocolate cake recipe which my mum has been making for years and has always been a crowd pleaser. Once I started making it though, I found it came out better as cupcakes. Teamed with a rich chocolate ganache, these cupcakes are truly delicious.

Cooking Time: 15 - 20 minutes

Ingredients
2 cups self raising flour
2/3 cup cocoa
1 3/4 cup castor sugar
2 teaspoons vanilla extract
3 eggs
185 g butter, softened
1 cup water
Ganache
1 small block of chocolate
1/2 cup thickened cream
Method
Grease and place cupcake cases into two cupcake tins.
Sift the flour and cocoa into a large mixing bowl.
Add all other ingredients.
Beat with an electric mixer on high for at least 5 minutes, or until the mixture turns into a lighter colour and is smooth.
Spoon into cupcake cases and bake in a 160 degree oven for 15 - 20 minutes or until a skewer comes out clean when inserted.
Stand on a wire rack to cool for at least 10 minutes.
To make ganache, heat cream in small saucepan on a low heat until just heated.
Break up the chocolate into the cream and mix with a whisk until smooth. I like to use Lindt milk chocolate to make it extra rich, but regular Cadbury chocolate is just as good.
Spoon the ganache onto cooled cakes and put into a fridge for a few hours to set.
