Ricotta Dip with Spinach

This dip tastes divine with croutons on the side!



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 45-60 servings

Ingredients
500g spinach
300g ricotta
300g sour cream
1 bottle Masterfoods chives (chopped)
30g spring vegetable dried soup
1 round cob bread loaf
Salt and pepper to taste



Method

  • Preheat the oven to 180 degrees celsius.

  • Finely chop the spinach and place into a large bowl.

  • Add ricotta and sour cream to the spinach and mix well till combined.



  • Mix in the dried soup powder and chives to the spinach mix.



  • Season with freshly ground black pepper and salt (as desired).

  • Cut open a loaf of bread from the top and produce a lid.



  • Using your hands, tear out pieces of soft bread from the interior bits of the bread and place on a tray.

  • Spray the bread bits with oil and place in the oven.



  • At the same time, place the loaf of bread in the oven and leave to crisp up.

  • Remove the bread bits and loaf from the the oven and empty the spinach and ricotta mixture into the hollow bit of the bread loaf. Cover with bread lid.

  • Serve with crispy bread bits and/or breadsticks.
