Ricotta Dip with Spinach

This dip tastes divine with croutons on the side!

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 45-60 servings

500g spinach
300g ricotta
300g sour cream
1 bottle Masterfoods chives (chopped)
30g spring vegetable dried soup
1 round cob bread loaf
Salt and pepper to taste


Preheat the oven to 180 degrees celsius.

Finely chop the spinach and place into a large bowl.

Add ricotta and sour cream to the spinach and mix well till combined.

Mix in the dried soup powder and chives to the spinach mix.

Season with freshly ground black pepper and salt (as desired).

Cut open a loaf of bread from the top and produce a lid.

Using your hands, tear out pieces of soft bread from the interior bits of the bread and place on a tray.

Spray the bread bits with oil and place in the oven.

At the same time, place the loaf of bread in the oven and leave to crisp up.

Remove the bread bits and loaf from the the oven and empty the spinach and ricotta mixture into the hollow bit of the bread loaf. Cover with bread lid.

Serve with crispy bread bits and/or breadsticks.
