Ricotta Gnocchi with Browned Herb Butter
This is the perfect use for the
ricotta from my first recipe. Homemade ricotta is best but any store bought ricotta works fine too. You'll get soft pillowy cushions of goodness.
Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 2 servings
Ingredients
250 g Ricotta
1 Large Egg Yolk
1/4 tsp Salt
30 g Parmesan/ any hard cheese
50 - 75 g flour
flour for dusting
80 g butter
herb of your choice (thyme, basil, sage)
Method
Mix the yolk, salt and cheese in a large bowl.
Add the ricotta and mix thoroughly. A wooden spoon or spatula is enough for this.
Carefully fold the flour into the mixture. Don't overmix! You want it to stay nice and fluffy.
Next, flour your work surface. Take a big spoonful of the dough, sprinkle flour on top (flour your hands) and roll it into a thin log, roughly a few fingerwidths wide.
Flour a knife for this step and cut the log into gnocchi. While you're doing this boil some water.
Pop the gnocchi into the boiling water. Give it a quick stir so it doesn't stick. Once it floats to the top it's done! Lift it out of the water with a sieve.
Now, heat the butter up in a small pan. Cook it until it starts to brown and add in the herbs.
Pour this mixture over the gnocchi and enjoy! (you can serve the gnocchi with any sauce you like)
