Ricotta Pappardelle

Fast mid-week dinner with plenty of tweaking potential!



Preparation Time: 5 min
Cooking Time: 15 min
Makes: 3 servings

Ingredients
375 Fresh egg pappardelle
2 tsp oil
1 shallot
1/4 red onion
200g shortcut bacon
Sml head broccoli
1tsp crushed garlic
300mL Thickened cream
150g baby spinach
1 egg
2 tbls fresh herbs (I used parsley and mint)


Method
  • Heat oil in a wide pan. Fry garlic, shallot, onion, broccoli and bacon until cooked.

  • Add cream and spinach to pan. Bring back to a simmer and add egg and ricotta, stirring to combine.

  • Bring a pot of salted water to the boil. Cook egg pappardelle for 4 minutes until al dente.

  • Add pasta and 1/4 cup of cooking water to sauce in pan. Combine and serve!

  • Add any quick-cooking vegetables and fresh herbs you like to mix it up a little.
