Roast Capsicum & Peanut Dip

A chunky and delicious dip. This Roast Capsicum and Peanut Dip is easy to whip up and perfect on a wrap or cracker and beautiful spooned over some cream cheese for a more hearty dip.

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 8 servings

2 red capsicum
1 garlic clove
1 tbsp olive oil
1/2 c salted peanuts
1 tbsp Greek yogurt
Green of one spring onion
1 tsp chilli flakes
Salt and pepper to taste

Cut the capsicums into chunks and place them skin side up in a baking dish with the garlic clove.

Bake at 200 for 15 minutes or until the skins have started to blister and blacken.

Put aside to cool, meanwhile chop or whack the peanuts until you have small chunks.

Once the capsicum is cool enough to handle remove and discard the skins. Place the capsicums in a blender with the garlic, oil, yogurt and seasoning.

Blend until smooth.

Stir through the crushed peanuts and chilli and pour into a bowl. Garnish with snips of spring onion and seasoning.

Enjoy with crackers or bread.

NOTE: this also works well with cashews and can be used as a pasta sauce.
