Roast Capsicum Peanut Dip

A chunky and delicious dip. This Roast Capsicum and Peanut Dip is easy to whip up and perfect on a wrap or cracker and beautiful spooned over some cream cheese for a more hearty dip.

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 8 servings

Ingredients
2 red capsicum
1 garlic clove
1 tbsp olive oil
1/2 c salted peanuts
1 tbsp Greek yogurt
Green of one spring onion
1 tsp chilli flakes
Salt and pepper to taste

Method
  • Cut the capsicums into chunks and place them skin side up in a baking dish with the garlic clove.

  • Bake at 200 for 15 minutes or until the skins have started to blister and blacken.


  • Put aside to cool, meanwhile chop or whack the peanuts until you have small chunks.

  • Once the capsicum is cool enough to handle remove and discard the skins. Place the capsicums in a blender with the garlic, oil, yogurt and seasoning.


  • Blend until smooth.

  • Stir through the crushed peanuts and chilli and pour into a bowl. Garnish with snips of spring onion and seasoning.


  • Enjoy with crackers or bread.


  • NOTE: this also works well with cashews and can be used as a pasta sauce.
