Roast Chicken with Barley and Vegetables

Instead of serving rice with chicken I try to mix up my side dishes for a healthier meal. Pearl barley is a high fibre textured alternative to rice, which soaks up the chicken juices something beautiful.



Preparation Time: 5 minutes
Cooking Time: 1.45 minutes
Makes: 4 servings

Ingredients
1 Onion
2 Carrots
Balsamic Vinegar
Half a mug of Pearl Barley
1 Vegetable Stock Cube
1 Chicken
Black Pepper
Thyme


Method
  • Pour the seasoning and vinegar into a small bowl.

  • Rub most of the seasoning all over the chicken.



  • Pour the remaining seasoning inside the chicken.



  • Place the chicken in the oven for 1 hour at 170 degrees/between gas mark 3 and 4.

  • Peel and chop the carrots into chunks and finely slice the onion.

  • Open the oven door and add the vegetables to the tray. Baste the chicken and place back in the oven for a further 45 minutes.

  • Wash the pearl barley.



  • Add the barley to a saucepan of boiling water along with the stock cube and leave to simmer for 20 minutes.



  • Remove the chicken from the oven and begin to carve out portions starting with the breast.

  • Plate up in the following order: barley, chicken, vegetables, gravy (from the bottom of the tray).

  • I can guarantee you'll be using barley again.
