Roast Chilli Chicken
Spice up your roast dinner with a tongue tingling stuffing.
Preparation Time: 15 minutes
Cooking Time: 1 hour 23 minutes
Serves: 6-8
Ingredients
1.5 kg chicken*
2 small onions
1 Granny Smith apple (or green apple of choice)
30 g spinach
3 rashers streaky bacon
1 tbsp green chilli pickle
Method
Dice the onions, slice the bacon, and core and slice the apple.
Fry the for about a minute, and then add the onions and apple, and continue frying for a couple of minute or until they start to colour.
Place onions, bacon, apple, spinach and green chilli pickle in a food processor and blend together.
Stuff the chicken with the mixture, and rub the oily residue left on your hands, over the chicken.
Cook in the oven for 1 hour 20 minutes*.
Slice into the chicken to make sure it is fully cooked before serving with potatoes and vegetables.
N.B. Cooking time is based on a 1.5kg chicken. You may need to adjust the time accordingly. A good guide is 20 minutes per 500g plus 20 minutes.
