Roast Garlic Broccoli Soup With Parmesan

Cheesy, green and packed with goodness. This soup is full of sweet garlic, iron filled broccoli and salty cheese. Enjoy with some garlic baguette for a healthy dinner.



I know 8 garlic cloves sounds like a lot, but once they are roasted and sweet you will wish you roasted more!

Preparation Time: 30 minutes
Cooking Time: 20 minutes
Makes: 4-6 servings

Ingredients
2 bunches broccoli
1& #8260 ;2 cup olive oil
8 garlic cloves
3 teaspoons dried thyme
10 cups vegetable stock
1& #8260 ;4 cup dry white wine
1 small white onion
1 tin chickpeas
2 tablespoons fresh lemon juice
Salt & pepper to taste
6 tbsp parmesan cheese
Baguette for serving



Method
  • Chop the broccoli and peal the garlic. Place on a lined oven tray and cover with a drizzle of olive oil and half the thyme. Bake in a moderate oven for 30 mintues.



  • Place the remaning oil and thyme in a large hot pan or pot. Stir through chopped onion and drained chickpeas. Once fragrant pour in the wine and vegetable stock.

  • Bring soup to the boil and simmer for 10 minutes. Add the roasted broccoli and garlic and cook for another 10 minutes.



  • Blend the soup until smooth, add a fresh squeeze of lemon and serve. Top with parmesan cheese, dukka and serve with some crispy bread.
