Roast Pork Belly Cauliflower Bake

I'd like to think of this as the Australian version of a Thanksgiving roast.




Preparation Time: 20 minutes
Cooking Time: 1.5 hours
Makes: 4 servings

Ingredients

For the Roast

700g pork belly
300g capsicum
200g pumpkin
300g potato
200g broccoli
3 onions
3 carrots
Sea salt
Olive oil
Italian Herbs

For the Cauliflower Bake

250g cauliflower
100-200g cheese (variable)
250ml milk
2 tbsp flour
25g butter
50g mozzarrella cheese
2 tbsp breadcrumbs

Method

  • Chop up all the vegetables - capsicum, pumpkin, potato, onion, broccoli, carrots into large chunks.

  • Use a toothpick to pierce through the onion so that they don't separate during cooking.



  • Place the pork belly on a wire rack. Use olive oil to cover the meat in a rich layer. Then, add sea salt on the top of the pork belly so that it seeps through.

  • Place the onion, pumpkin and potato pieces into a large tray, and put the pork belly on the wire rack into the tray. Sprinkle a thin coat of Italian herbs onto the tray.

  • Preheat the oven to about 220 degrees celsius.

  • Put the rest of the vegetables into a separate tray and drizzle with olive oil (both base and top). Mix in oil thoroughly.

  • Sprinkle some Italian herbs onto the vegetable tray.

  • Once the oven is well-preheated, place the tray of vegetables into one tier of the oven. Place the tray with the pork belly on the top tier of the oven.

  • Let it cook for about an hour, checking the vegetable tray every 20 minutes and flipping the vegetables for better cooking.

  • Cook the pork belly till the top starts 'crackling', turns solid (hard).



  • For the cauliflower bake, first chop up the cauliflower into large chunks.

  • Next, steam the cauliflower till it goes soft. Place it into a glass (oven-friendly) dish.

  • In a saucepan, add milk, flour and butter. Mix the ingredients together until they come to a boil.

  • Once the mixture becomes smooth and thick, remove from heat.

  • Sprinkle shredded mozzarella cheese over the cauliflower. Pour the mixture over the cheesy cauliflower. Add the rest of the cheese and a handful of breadcrumbs to top the dish off.

  • Once the roast has been cooked, put the cauliflower dish in the oven for about 20 minutes until the cheese looks golden brown.
