Roast Potato Lettuce Wraps

These lettuce wraps are the perfect lunch or dinner. The use of lettuce instead of bread gives these wraps a great lightness whilst the potato and avocado still make this dish a satisfying meal.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 1 servings

Ingredients
1 large potato
1 small beetroot - cooked
1/2 carrot
1/2 avocado
1/2 tomato
4 large cos (or romaine) lettuce leaves
Seasoning and sauce to taste.

Method
  • Cube the potato and put on to bake. I used my oil-free-chippies recipe but cut them into cubes instead of fries.



  • Whilst the potato is cooking, cube your tomato, beetroot, avocado and grate your carrot and add to a bowl. Carefully peel off whole lettuce leaves and place them in a separate bowl.



  • Once the potatoes are beautiful and bronze add them to the salad bowl and toss with seasoning.
  • Now eat, add the salad filling into the lettuce leaf wraps and enjoy this delicious lunch or dinner!



  • You can sub the fillings for your favourite salad and also add cheese or sauce.
