Roast Potato Lettuce Wraps
These lettuce wraps are the perfect lunch or dinner. The use of lettuce instead of bread gives these wraps a great lightness whilst the potato and avocado still make this dish a satisfying meal.

Makes: 1 servings
Ingredients
1 large potato
1 small beetroot - cooked
1/2 carrot
1/2 avocado
1/2 tomato
4 large cos (or romaine) lettuce leaves
Seasoning and sauce to taste.
Method
Cube the potato and put on to bake. I used my oil-free-chippies recipe but cut them into cubes instead of fries.
Whilst the potato is cooking, cube your tomato, beetroot, avocado and grate your carrot and add to a bowl. Carefully peel off whole lettuce leaves and place them in a separate bowl.
Once the potatoes are beautiful and bronze add them to the salad bowl and toss with seasoning.
Now eat, add the salad filling into the lettuce leaf wraps and enjoy this delicious lunch or dinner!
You can sub the fillings for your favourite salad and also add cheese or sauce.
