Roast Purple Cauliflower with Lemon Tahini Dressing

Purple cauliflower doesn't taste hugely different from normal cauliflower, but sure looks stunning on the plate. Paired with the tahini lemon sauce, it makes a really yummy salad. For the greens, I used celery greens, but rocket, baby spinach or a mix of small greens would work nicely too.



Preparation Time: 10 minutes
Cooking Time: 25-30 minutes
Serves: 4-8

Ingredients
Olive oil
1 head purple cauliflower
2 garlic cloves
1 small handful fresh greens

Dressing
2 tbsp tahini sauce
Juice of 1 lemon
2-4 tbsp water
1 tsp ground cumin
Salt and pepper

Method
  • Preheat the oven to 180°C (350°F).
  • Separate the cauliflower into florets and lay out on a baking tray. Thinly slice the garlic and scatter over the cauliflower, then drizzle with oil.
  • Place in the oven for 25-30 minutes or until cooked through.



  • Meanwhile, prepare the dressing by mixing all the ingredients together in a small bowl. Adjust the water amount according to your liking, but it's good if it's runny enough, like a normal dressing.



  • Lay out the greens on a platter or bowl. When the cauliflower is ready, layer it on top with the garlic.



  • Pour over the dressing and serve immediately.
