Roast Veg Mixed Bean Feta Salad

A delicious and healthy carb-free meal idea



Preparation Time: 15 minutes
Cooking Time: 40minutes
Makes: 4 servings

Ingredients
1 x carrot
1/4 head of broccoli
2 or 3 small onions
1 red pepper
A handful of butternut squash
Sprig fresh rosemary, chopped
2 tbsps olive oil
1 x tin mixed beans
150g feta cheese



Method
  • Preheat the oven to 180
  • Peel and chop all of the vegetables into bite sized chunks
  • Place in a roasting tin, pour over the oil and scatter the fresh rosemary on top
  • Roast for 30-40 mins, checking every ten minutes or so to turn the veg and ensure it doesn't burn
  • Open the mixed beans, sieve and rinse with fresh water
  • When the vegetables are ready, pour the beans into the tin and combine
  • Chop or crumble the feta over the top
  • Serve with a mixed green salad
