Roast Veg Mixed Bean Feta Salad
A delicious and healthy carb-free meal idea
Preparation Time: 15 minutes
Cooking Time: 40minutes
Makes: 4 servings
Ingredients
1 x carrot
1/4 head of broccoli
2 or 3 small onions
1 red pepper
A handful of butternut squash
Sprig fresh rosemary, chopped
2 tbsps olive oil
1 x tin mixed beans
150g feta cheese
Method
Preheat the oven to 180
Peel and chop all of the vegetables into bite sized chunks
Place in a roasting tin, pour over the oil and scatter the fresh rosemary on top
Roast for 30-40 mins, checking every ten minutes or so to turn the veg and ensure it doesn't burn
Open the mixed beans, sieve and rinse with fresh water
When the vegetables are ready, pour the beans into the tin and combine
Chop or crumble the feta over the top
Serve with a mixed green salad
