Roasted Almonds with Rosemary and Sea Salt

Roasted Almonds are a delicious healthy snack to nibble on anytime of the day or night but also make great gift ideas.

Preparation Time: 12-Hours
Cooking Time: 6-Hours Drying Time
Makes: 250gm

1 Cup Raw Natural Almonds
2 Tablespoons Whey
Rosemary and Sea Salt to season

  • Soak the almonds in water and whey for 12-hours.

  • Soak the raw almonds in water and whey.

    I recently made a batch of soft cheese and froze small containers of whey for future use. I find the whey adds another element of flavour but also helps in the activation process. If you don’t have any whey you can easily omit this ingredient as the almonds only need to be soaked in water overnight to activate.

  • Use enough water to completely cover the almonds.

  • 12Hours of soaking and you have activated almonds.

  • After 12-hours, rinse the almonds under cold water.

  • Rinse the activated almonds under cold running water.

  • Dehydrate the almonds on a very low heat in the oven until dry for approximately 6 hours. The almonds will be ready when the nuts feel and taste dry.

  • Dehydrate the almonds on low heat in the oven until dry.

  • Season the almonds with rosemary and sea salt and dry roast in a frying pan for approximately 5-8 minutes. The natural oils in the almonds will continue to cook after you remove from the pan, therefore any longer than 8-minutes and you will burn the almonds.

  • Season the roasted almonds with rosemary and sea salt.

  • Serve the with cold beer.
