Roasted Balsamic Mushrooms
Mushrooms are the perfect vegetarian dish, high in protein and fibre, low in fat and bursting with essential nutrients. They can be eaten raw, baked, stuffed, roasted, braised and stir-fried and can be eaten for breakfast, lunch or dinner.
With the unseasonably hot start to spring, we have taken our cooking outdoors and barbecuing everything including these easy to prepare and delicious Balsamic Mushrooms. This recipe works just as well if you roast them in the oven.

Preparation Time: 15 minutes (includes marinating time)
Cooking Time: 15 minutes
Makes: 2 side servings
Ingredients
16 large button mushrooms
Button mushrooms are perfect for roasting.
Marinade
1 cup of balsamic vinegar
3 tablespoons honey
3 tablespoons extra virgin olive oil
1 teaspoon oregano
Salt and pepper to taste
Method
Making the Marinade
Combine the marinade ingredients and mix thoroughly.
Combine all ingredients to make the marinade.
Remove the stalks from the mushrooms and put caps and stalks into a bowl.
Drizzle the marinade over the mushrooms, making sure they're thoroughly coated. Set aside for 15 minutes.
Drizzle marinade over mushrooms.
Occasionally stir the marinating mushrooms.
Stir the marinade through the mushrooms.
If barbecuing mushrooms
Pre-heat BBQ and once hot add the mushrooms (caps and stalks) and cook for approximately 15 minutes or until caramelised and cooked. Serve immediately.
If roasting mushrooms in an oven
Pre-heat oven to 200 degrees and place marinated mushrooms on a cooking tray. Roast for 15 minutes or until marinade has caramelised and mushrooms are cooked.
